  • 1/3 C. mayonnaise
  • 2 T. sweet pickle relish
  • 1 T. shallots, chopped
  • 1 tsp. capers, chopped
  • 1/4 tsp. hot pepper sauce
  • 1 lbs. large shrimp, peeled and deveined
  • 1 1/2 tsp. salt-free Cajun seasoning
  • 2 tsp. extra virgin olive oil
  • 4 hoagie rolls
  • 1/2 C. romaine lettuce, shredded
  • 1/2 C. pickles
  • 8 thin tomato slices

Begin by combining the mayo, sweet pickle relish, shallot, capers, and hot pepper sauce in a bowl. Now heat a greased skillet over medium-high heat and combine the shrimp and Cajun seasoning in a bowl. Add shrimp to pan and cook for about 2 minutes on each side. Cut each roll in half horizontally, place lettuce on the bottom half of each roll and then with tomato slices, pickles, and finally top it of with the cooked shrimp. Spread top half of each roll with mayonnaise mixture.
