Crispy Skillet Mashed Red Potatoes

- 1 ½ lb. red potatoes, cut in half
- 1 T. butter
- 2 T. olive oil
- 2 T. green onion
- 2 T. mushrooms
Heat a skillet over medium heat. Pour the olive oil in the skillet. Add the butter. Add the mushrooms to sauté them. Add in the cut red potatoes. Brown them. Sprinkle salt and pepper. Remove from heat. Mash a few potatoes with a fork. Leave some whole. Sprinkle the green onions. Serve and enjoy.
