  • 4 ½ t flour
  • 2 tsp sugar
  • 1 egg white
  • 4 T butter
  • 4 oz smoked salmon, chopped
  • 1 ½ tsp finely chopped shallots
  • ½ creme fraiche
  • Salt and pepper to taste
  • ¼ tsp lemon zest

First, preheat oven to 375 degrees. Line two baking sheets with aluminum foil. In a mixing bowl, whisk together the flour, sugar, and salt. Mix in the egg white and beat until it’s smooth. Lastly, add the butter and whisk until it’s smooth and creamy.

Spoon the tuile batter onto the baking sheet and bake them for about eight minutes until the tuiles are golden brown. Remove tuiles from the oven and let cool.

In another mixing bowl, mix salmon, shallot, lemon zest, and a pinch of pepper. Place the salmon mixture onto the tuiles and top with creme fraiche. Serve immediately,
