  • 2 ½ C. all-purpose flour
  • ½ lb. medium potatoes, boiled
  • 1 large egg
  • 2 Tbs. unsalted butter, melted
  • 10 ripe black plums,
  • 1 stick of butter
  • 2 Tbs. brioche breadcrumbs
  • 2 Tbs. granulated sugar
  • 1 Tbs. ground cinnamon

Mash the potatoes smooth and mix them with the egg. Add in the melted butter and flour and a Tbs. of sugar, keep combining until the dough is formed and smooth. Roll out the dough and cut it into squares. Half the plums and place them inside the squares. Toss a portion of the cinnamon-sugar on the fruit and roll the dumpling in a ball. Boil the balls for about 5 minutes or until the dumplings rise to the top.

In a skillet, melt the stick of butter with the breadcrumbs and stir. Roll the dumplings in the breadcrumb mixture.
