  • 1/2 C. tequila
  • 1/4 C. lime juice (from about 4 limes)
  • 2 cloves garlic, minced
  • 1 jalapeños, chopped
  • 1 lbs. chicken breasts, boneless
  • 1 T. canola oil
  • 1 C. mango, chopped
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Salt to taste

In a baking dish, combine the tequila, lime juice, chopped jalapeño, garlic, and salt. Add the chicken and marinate it for about 25 minutes. Transfer the marinated chicken to a skillet and cook for about 6 minutes on each side. Now, lay a tortilla on a flat surface and layer it with chicken, jalapeño, and mango.
