Crock Pot BBQ

Out of this world, no fuss, crock pot BBQ! Feel free to substitute chicken or pork for the roast if desired.

  • 2-3 lb. chuck roast
  • Sauce:
  • 1 lg. onion, finely chopped
  • 1/2 C. celery, finely chopped
  • 1 Tbs. vinegar
  • 3 Tbs. brown sugar
  • 4 Tbs. lemon juice
  • 3 Tbs. Worcesterchire sauce
  • 1 C. tomato ketchup
  • 1 tsp. chili powder

Put meat in crockpot. Pour sauce over meat and let cook until tender. Remove meat from pot and shred with fork. Return to sauce and mix well. Let simmer until well mixed. Salt and pepper according to taste.

  • For Judy 018: Buy a smaller chuck roast and continue making the sauce just as the recipe states. Use only a little on your roast and store the rest of the sauce in the refrig. for use at a later time. It's great on other things too.

  • I only have a 1 1/2 quart crock pot; how do you adjust this down. I have never used the crockpot and am only cooking for 1.Thanks
