Crock-Pot Peach Cobbler
Ingredients
- 3/4 C. all-purpose baking mix, (Bisquick)
- 1/3 C. sugar
- 1/2 C. brown sugar
- 1/2 can evaporated milk
- 2 tsp. margarine or butter, melted
- 2 eggs
- 3 large ripe peaches, mashed
- 2 tsp. vanilla
- 3/4 tsp. cinnamon
Directions
Lightly grease Crock-Pot or spray with non-stick coating spray. In a large bowl, combine sugars and baking mix. Add eggs and vanilla. Stir. Pour in margarine and milk and stir. Mix in peaches and cinnamon, until well mixed. Pour into Crock-Pot. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours. Serve warm. Top with vanilla ice cream if desired.

So I started over and tweeked the recipe. Instead of mashing the peaches I sliced up 5 fresh ones. I also added half of the condensed milk and some peach juice from a can of peaches [I used in jello earlier ] to equal the 1/2 can evap milk..I didn't use the sugar I used stevia. I topped it with an apple crisp topping. It came out great!
