Creamy, spicy and full of flavor, Thai Coconut Curry is one my favorites to make. This recipe makes it even easier. Just combine everything and stick it in the crock-pot for a delicious healthy meal.

  • 1 can coconut milk
  • ¼ C peanut butter
  • 2 Tbs red curry paste
  • 2 Tbs fish sauce
  • 3 Tbs lime juice
  • 2 Tbs brown sugar
  • 4 garlic cloves; minced
  • ½ C chicken broth
  • ½ tsp ground ginger
  • 1 ½ lb skinless, boneless chicken breast; cut to small pieces

Grease the crockpot with a little oil.

In the crock-pot, mix the coconut milk, peanut butter, curry paste, fish sauce, lime juice, brown sugar, garlic, chicken broth, ginger and garlic together.

Once the ingredients are well mixed, add in the chicken. Ensure that the chicken is fully submerged into the sauce. Then turn the crock-pot on low for 3 hours.

When it is done, dish out and serve with a side of white rice.
