The strong, salty taste of corned beef is well balanced out with apple, brown sugar, and milder ingredients.

  • 1 corned beef brisket
  • 1 quart apple juice
  • 1 C. brown sugar
  • 1 Tbs. prepared mustard
  • 8 small red potatoes
  • 2 medium carrots, pared and cut into chunks
  • 1 onion, peeled and cut into eights
  • 1/2 head cabbage, cut into chunks

Place all ingredients in large crock pot (cut meat in half if necessary). Stir to mix. Cook on high for 4 to 5 hours on high or 8 to 10 hours on low. Remove meat and vegetables and some of the cooking liquid. Slice meat thinly across the grain. Serve with the vegetables and some of the liquid. Use left over corn beef the next day.....layer in crock pot with sauerkraut and Swiss cheese. Warm and serve on rye bread with 1000 Island dressing!

  • this really sounded good. I took the suggestion and used 1/4 the sugar. It still was too sweet. We did not care for it at all. However, I did use the left over corn beef as suggested in the recipe for the next day. Used home canned sauerkraut and the recipe turned out wonderful.

  • I really wanted to try this, but didn't have a 'beef Brisket" so I used a "sirloin steak" about half the size. I used half of the other ingredents, Is was to sweet for us. I would try it again, with a brisket but would use only 1/4 of the sugar. We do not care for meat.vegs. that have a "sweet" taste, maybe I should of thought of that, it just 'sounded" so good.
