Crockpot Bean Soup

This soup couldn't be easier to make and it has lots of hearty ingredients like three kinds of beans, ham and smoked sausage.

Ingredients

  • 2 15 oz. cans northern beans
  • 1 15 oz. can pinto beans
  • 1 15 oz. can black beans
  • 1 1/4 tsp. salt (optional)
  • 1/2 tsp. black pepper
  • 1 large chopped sweet onion
  • 2 cloves minced garlic
  • 1 16 oz. can diced tomatoes
  • 1 chopped jalapeno pepper (or other variety)
  • 2 C. cooked ham, diced
  • 2 lb. smoked sausage, diced
  • 1 tsp. cayenne pepper or 2 tsp. Cajun seasoning

Directions

Combine all ingredients in crock pot. Cook on low for 6-8 hours or high 4-5. Stir occasionally. Serve with cornbread.

  • Way too much sausage! Cut to 1lb or less & rinse all beans plus add 1 14oz can of chicken broth.

  • I have used the same recipe but substituted pearl barley for the black beans and then grate1 fresh carrot as a finishing touch for each bowl served.
