Crockpot Beef and Black Eyed Peas
Ingredients
- 1 lg. onion, sliced
- 2 carrots, chopped
- 3 ribs celery, chopped
- 3 sm. red potatoes, quartered
- 1 sm. green pepper, chopped
- 1 jalapeno pepper, chopped
- 1 8-oz. pack sliced mushrooms
- 1 can black eyed peas, drained and rinsed
- 2 Bay leaves
- 3/4 lb. lean stewing beef
- 1 Tbs. Worcestershire Sauce
- 3 C. no-salt added tomato sauce
Directions
Coat a 4 qt. crockpot with nonstick cooking spray. Add vegetables, followed by black-eyed peas, bay leaves, beef, Worcestershire sauce and tomato sauce. Cook on low for 8 hours.
