Ropa Vieja means "old clothes," but there's certainly nothing old about this recipe. It's a new Latin dish you can add to your growing collection of ethnic recipes. Make this a complete meal with some rice served on the side.

  • 2 cloves garlic, chopped
  • 1 6 oz. can tomato paste
  • 1 tsp. ground cumin
  • 1 tsp. fresh cilantro, chopped
  • 1 T. olive oil
  • 1 T. white vinegar
  • 1 T. vegetable oil
  • 2 lbs. beef flank steak
  • 1 C. beef broth
  • 1 8 oz. can tomato sauce
  • 1 onion, sliced
  • 1 green bell pepper, seeded and sliced into strips

Heat vegetable oil in a skillet over medium-high heat. Brown the flank steak for four minutes on each side.
Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil, and vinegar. Stir until well blended. Cover the mix, and cook on high for four hours. Serve with rice.
