  • 3 lbs beef roast cut into 1-inch cubes
  • 3 cup beef broth
  • 4 carrots, sliced
  • 2 potatoes, cubed
  • 1 clove garlic
  • 1/2 onion,
  • 1/3 cup flour
  • 1 1/2 tsp salt
  • 1/2 tsp thyme
  • 1/4 tsp pepper
  • 10-15 mushrooms, halved

Add all ingredients, except mushrooms, to crockpot and cook on high for 6 hours. Add mushrooms and simmer for additional 15 minutes. Serve in bowls, or over rice or noodles for an extra filling meal.
