  • 1 1/2 to 2 lbs. lean beef stew meat
  • two 15-oz. cans pinto beans, undrained
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 med. potatoes, cubed
  • one 1.3-oz. envelope taco seasoning
  • two 15-oz. cans Mexican stewed tomatoes

In a non-stick skillet, brown stew meat.  In a large slow cooker, combine stew meat, pinto beans, onion, carrots, potatoes, taco seasoning, and 2 cups water.  Cover and cook on low for 6-7 hours.  Add stewed tomatoes and cook 1 more hour.
