Crockpot Blood Orange Upside-Down Cake

- 3 tbs Unsalted Butter
- 1/3 C Light Brown Sugar, packed
- 2 small Blood Oranges, divided
- 1 small Grapefruit
- 1 box Yellow Cake Mix
- Vegetable Oil and Eggs as called for on cake mix
- 1 tbs Blood Orange Juice, or more mixed with water as called for on cake mix
Start this recipe by making your topping. Melt the butter in a small saucepan over medium heat. Once melted, add the brown sugar and whisk to combine until the sugar fully dissolves. Continue by lining the basin of your crockpot with parchment paper. Pour the topping into the bottom of the crockpot.
Continue by preparing your blood oranges. Grate the rind from one of the oranges and the grapefruit; set aside. Slice both the grapefruit and oranges in thin slices. Remove any seeds that you can see and then line the bottom of the pan with your grapefruit and blood orange rounds.
Next, prepare your cake mix according to package directions but substitute as much of the water as you can with the juice of your blood orange and grapefruit. Pour the finished cake mix on top of your topping and cover. Cook on high for two and a half to three hours or until the center is cooked through.
