  • 1 Tbsp. vegetable oil
  • 1 lb. baking potatoes, cubed
  • 1/2 large onion, chopped
  • 1/2 C. shaved carrots
  • 5 C. chopped cabbage
  • 1 can kidney beans
  • 2 C. water
  • 1 jar tomato sauce
  • 4 beef bouillon cubes
  • 1 1/2 tsp. ground cumin
  • 1 tsp. salt
  • 1/2 tsp. pepper

Heat the oil in a stockpot over medium high. Add the onions and cook until translucent. Add the potatoes, cabbage, carrots, kidney beans, water, tomato sauce, bouillon, cumin, salt, and pepper. Stir and mix well. Put the mixture in the slow cooker and cook on low for 8 hours until the potatoes are tender.
