  • 1 C. minute brown rice
  • 2 C. chicken broth
  • 1 tsp. minced garlic
  • 1 tsp. kosher salt
  • 1/1 tsp. black pepper
  • 2 C. sliced mushrooms
  • Salt and pepper, to taste
  • 2 C. white cheddar cheese

Put the rice in the bottom of the slow cooker and pour the broth on top and season with garlic, salt, and pepper. Place the mushrooms on top of the rice and mix in half the cheese. Cover and cook on low for about 4 hours until the rice is cooked through. Season with salt and pepper and stir in the remaining cheese. Garnish with parsley and serve.
