  • 6 chicken legs
  • 1 16oz. brown rice
  • 2 ½ C. chicken broth
  • 2½ C. water
  • ½ Vidalia onion diced
  • Salt and freshly ground pepper to taste
  • 1/3 C. black olives (optional)

Season chicken with salt and pepper to taste and bake until they start to brown at 350°F, or for about 10 minutes. Take out and set aside. Pour chicken broth and water into crockpot and pour rice into mixture and stir slightly. Turn crockpot to high, stirring occasionally, let cook until rice starts to get tender, or for about 45 minutes. Once rice begins to become tender place chicken in and let cook until most of the water/broth mixture is cooked out, or for about an hour. Rice should be tender, serve promptly.
