  • 3 Boneless Skinless Chicken Breasts, chopped
  • 1 Medium Onion, chopped
  • 1/2 C. White Button Mushrooms
  • 1 tsp. Lemon Zest
  • 1 tsp. Dried Basil
  • 1 tsp. Dried Oregano
  • 1 tsp. Dried Thyme
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 2 C. Chicken Broth
  • 2 Medium Zucchini, cut into strips lengthwise

In a large slow cooker, stir together the chicken, onion, mushrooms, lemon zest, basil, oregano, and thyme. Season with salt and pepper as needed. Pour chicken broth over the chicken mixture. Cook on low for 6-8 hours until chicken is cooked through. In the last 2 hours of cooking, stir in the zucchini strips.
