Here's a super easy version of a chicken curry!

Ingredients

  • 3 boneless, skinless chicken breast halves, cut into thin strips
  • 1/2 C. chicken broth
  • one 10-oz. can cream of chicken soup
  • 1 onion, coarsely chopped
  • 1 red bell pepper, julienned
  • 1/4 C. golden raisins
  • 1 1/2 tsp. curry powder
  • 1/4 tsp. ground ginger

In a 5- to 6-quart slow cooker sprayed with vegetable cooking spray, combine chicken, broth, soup, onion, bell pepper, raisins, curry powder, and ginger. Mix well. Cover and cook on low for 3-4 hours.  Serve over hot cooked rice.
