  • 2 lb. skinless chicken breast
  • 2 Tbsp. tomato paste
  • 1 C. coconut milk
  • 3/4 C. chicken broth
  • 3 garlic cloves, minced
  • 1 onion, finely chopped
  • 2 medium red bell peppers, diced
  • 4 Tbsp. Garam Masala
  • 1 tsp. cumin seeds
  • salt and pepper, to taste

Put the tomato paste, coconut milk, garlic, salt, and pepper in the crockpot and stir well. Add the onions, peppers, chicken, and broth. Mix everything well and cover. Cook on low heat 8 hours until the chicken is tender. Serve the curry over white rice or vegetables.
