Crockpot Chicken Posole

Ingredients
- 1 lb. lean boneless pork, cut into 1" cubes
- 3 C. canned hominy, drained and rinsed
- 2 red chiles, stemmed, seeded and chopped
- 1 large onion, chopped
- 5 cloves garlic, crushed
- 1 tsp. dried oregano
- 1/2 tsp. ground cumin
- 5 C. chicken stock
- 1 1/2 C. red chile sauce
- 2 tsp. salt
- Cilantro and shredded Parmesan cheese for topping

Directions
Lightly brown pork on all sides for about 4 to 5 minutes. Mix pork and remaining ingredients except for toppings in crockpot. Cover and cook on low for 8 to 10 hours. Garnish with cilantro and cheese before serving.
