Crockpot Creamy Garlic and Parsley Mashed Potatoes Recipe

- 1 1/4 lbs. all-purpose potatoes
- 1 C. sour cream
- 3 tbsp butter
- 1 lg. garlic clove, minced
- 1 Tbs. chopped parsley
Peel potatoes and cut them in quarters. Put the potatoes in a crockpot. Set the crockpot on high. Add a little olive oil and heat for 2-3 hours. Once the potatoes are tender and soft begin to mash them. Add the rest of the ingredients into the crockpot and stir. Let the mashed potatoes sit for about 30 minutes and then serve them up.
