  • 7 chicken thighs OR 20 chicken wings(jointed and only bottom 2 sections used)
  • A green bell pepper, chopped
  • 6 green onions, chopped
  • 1 (16 oz.) can diced tomatoes
  • 1 (6 oz.) can tomato paste
  • 1 quarter lb. cooked ham, cut into one inch cubes
  • 1 tsp. salt
  • 2 dashes hot pepper sauce
  • 1/2 lb. Polish sausage, sliced diagonally
  • 3 C. cooked white rice

In a slow cooker combine the chicken, bell pepper, onions, tomatoes, tomato paste, ham, salt and hot pepper sauce. Cover and cook on low for to 5 hours. Turn the slow cooker control to high. Add the sausage and the cooked rice. Cover and cook on high for 15 to 20 minutes or until the sausage and rice are hot.

Makes 6 to 7 servings
