  • 3 lb. red potatoes, chopped
  • 1/4 C. unsalted butter
  • 4 cloves garlic, crushed
  • kosher salt and pepper to taste
  • 1/2 C. sour cream
  • 1/3 C. grated Parmesan cheese
  • 2 T. milk
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 2 T. fresh chives, chopped

Grease the inside of your crockpot with non-stick cooking spray. Add potatoes, butter, garlic, salt, pepper, and 1/4-cup of water to your prepared crockpot. Cover and cook on low for six hours. Pour in remaining ingredients, stir, and continue cooking for another hour. Give the potato mixture a good stir before serving.
