This tasty appetizer couldn't be easier - just leave the crockpot on and go. The slow cooking heat ensures the shrimp won't be overdone, and really brings out the garlic flavors. Serve with cocktail sauce for dipping.

  • 3/4 cup extra virgin olive oil
  • 6 gloves thinly sliced garlic
  • 1 teaspoon smoked Spanish paprika
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 2 lbs extra large raw shrimp, peeled, deveined
  • 1 tablespoon minced flat-leaf parsley

Mix oil, paprika, pepper, crushed red pepper flakes, garlic, and salt in slow cooker until all ingredients are blended. Cover and cook on high for 30 minutes. Stir in shrimp and make sure all are cooked evenly. Cook on high for 10 minutes, then stir, making sure all shrimp are cooking evenly. Cover and cook for 10 more minutes or until all shrimp are opaque. Transfer shrimp to a shallow serving dish and sprinkle with parsley.
