  • 1 1/3 C. dried chickpeas, soaked overnight
  • 2 garlic cloves
  • 2 tsp. olive oil
  • ½ tsp. salt
  • For hummus:
  • 2 garlic cloves
  • Salt to taste
  • 2 fresh lemons squeezed
  • ½ C. tahini
  • 1 C. olive oil

Placed presoaked chickpeas, garlic, olive oil and salt into a crockpot and pour water in to cover the chickpeas about 4 inches above. Cover and cook on high for 6 hours or on low for 12 hours. Chickpeas should be soft. Slightly drain chickpeas reserving about two cups of cooking water and set aside.

Place one garlic clove and salt into a food processor and blend until it is pureed, add lemon juice and pulse again. Slowly add chickpeas to the processor, pulsing each time to make the mixture smooth. Add your favorite fresh vegetables or seasonings to give this dip flavor. Serve with your favorite chips or pita bread.
