Crockpot Italian Beef Sandwiches For a Crowd

- 3 lb. chuck roast
- 2 pkg. dry Italian salad dressing mix
- 3 C. beef broth
- 1 red bell pepper, sliced thin
- 1 green bell pepper, sliced thin
- salt and pepper
Liberally salt and pepper the chuck roast and allow to come to room temperature. Add the rest of the ingredients to the crockpot and turn to high. After 30 minutes, add the seasoned roast in.
Cook on low for 8-10 hours. After that time, slice the meat thinly and return to the crockpot for 1-2 more hours or until it absorbs some juice. Serve on toasted rolls with hot peppers.
