This is a hearty soup that could serve as a full meal with a small salad.

  • 1 lb. Italian sausage (hot or mild, your preference)
  • 1 medium onion coarsely chopped
  • 1 green bell pepper, cut into 1/2 slices
  • 1 14 1/2 oz. can diced tomatoes with juice
  • 1 15 oz. can great northern beans
  • 2 14 oz. cans beef broth

Brown the sausage, onion, and green pepper; drain. Pour into crockpot along with remaining ingredients. Cover and cook on low 7-8 hours.

  • This soup was excellent. My husband loved it, my 6 year old just ate the sausage, and my 9 year old loved it. I left them a fresh loaf of italian bread to go with it . I also added an extra can of tomatos to make it go further and it was great.

  • I left out the green pepper and added Kale about 30 minutes before eating. Also used Italian tomatoes (better yet, add your own herbs). Very yummy!
