On a busy day, this recipe is a wonderful way to get a hearty meal without much work. Throw the ingredients in the crockpot and get on with the rest of your busy day, and dinner will be ready before you know it!

  • 1 lb. lean ground beef
  • ½ C. chopped onion
  • 3 C. beef broth
  • 1 C. tomato juice
  • 1 C. diced tomatoes
  • 1 can tomato paste
  • 2 Tbs. minced garlic
  • 1 Tbs. parsley
  • 1 Tbs. basil
  • 1 Tbs. oregano
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 2 C. shell pasta, uncooked
  • 1 C. water
  • 1 C. shredded mozzarella cheese

Combine diced tomatoes and tomato paste in the crockpot and stir well
Add beef broth, ground beef, parsley, basical, oregano, garlic, onion and tomato juice, stirring well
Add salt and pepper
Cover the crockpot and cook on low for about 8 hours
In the last half hour, add the shells and water
Stir and cover for the last thirty minutes
Serve and top with shredded cheese
