Kids are going to go crazy for this over-the-top, yet simple, recipe. Using all sorts of ingredients such as cheese, butter, bacon and potatoes, these loaded mashed potatoes have it all and they taste incredible.

  • 3 pounds red potatoes, scrubbed and cut into 2-inch pieces
  • 4 tablespoons butter, cut into squares
  • 1 teaspoon salt
  • 1/3 cup water
  • 1/2 cup half-and-half
  • 1/2 cup sour cream
  • 1 cup + 1/2 cup cheddar cheese, divided
  • 1 bunch scallions, chopped & divided
  • black pepper
  • 2-4 slices bacon, cooked, drained, and crumbled

Take out a 3-quart slow cooker and place potatoes inside. Dot with butter and sprinkle salt. Pour water over the top of the potatoes and heat on low until the potatoes are tender (about 8 hours). Take off cover and cool. Add half-and-half and sour cream. Mash and stir with potato masher until combined. Stir in 1 cup of cheese and most of the scallions. Transfer to a medium-sized casserole dish and pile potatoes gently. Top with additional cheese and scallions. Have bacon in separate bowl so guests can have the option of using it as a topping.
