Crockpot Macaroni and Cheese

This Mac and Cheese recipe may not be as quick as the box, but when you want to dump it in and forget about it, this is perfect.

Ingredients

  • 1 lb. macaroni, cooked and drained (cook for 1/2 the recommended time)
  • 1 Tbs. vegetable oil
  • 1 13 oz. can evaporated milk
  • 1 1/2 C. milk
  • 1 tsp. salt
  • 3 C. shredded cheddar cheese (American cheese melts best)
  • 1/4 C. butter

Directions

Spray crockpot with non-stick spray. Toss macaroni and oil. Add other ingredients. Stir. Cover and cook on low for 3-4 hours. Stir 2-3 times during cooking time, if possible

  • I have made this recipe as posted and it came out very good using the 1 1/2 cups of regular milk plus the large can of evaporated milk. You must remember that the pasta expands as it continures to cook thereby absorbing the extra milk. I have also tweaked this recipe and used both Sharp Cheddar, Colby and Mozzarella with Green chopped onions, and 4 beaten eggs, and that is my familys favorite version, I usually use a total of 5 cups of cheese.   • A wee bit confusing; it's probably just 1/2 C Milk, considering the evaporated milk, but how can one be sure . To answer OSTIR (hope I spelled that right??)Any size crock pot will do for this one, as the size of recipe isn't too large. You only need a big one if you're cooking for loads of people and/or adding more stuff than your's could handle. Honest, they'll all cook at the same temp for the same time, no matter the size!
