  • 3 T. vegetable oil
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 1 C. tomatoes, chopped
  • 6 C. water
  • 1 lb. pork butt, cubed
  • 2 C. chickpeas, cooked
  • 1/2 lb. potatoes, peeled and cut into chunks
  • 1/2 lb. carrots, peeled and chopped
  • 1/2 head cabbage, cut into wedges
  • salt and pepper

Heat oil in a skillet, add pork, onion and garlic and stir until lightly browned. Now stir in the tomatoes and some salt and pepper. Transfer to a crockpot on low setting. Add water and simmer for about three hours. Add potatoes, carrots, cabbage, and chickpeas and continue simmering for one hour.
