Ingredients

  • Stew:
  • 8 boneless chicken thighs
  • 2 carrots, diced
  • 1 can green chiles
  • ¾ C. salsa
  • 1½ C. chicken stock
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1 onion, diced
  • 1 can corn
  • 1 can black beans
  • 1 green pepper, diced
  • Toppings:
  • 1 C. cheddar cheese, shredded
  • 1 avocado, cubed
  • ½ C. sour cream
  • Tortilla chips
  • 2 tsp. lime juice
  • ¼ tsp. salt

Directions

Add all of the stew ingredients into the crockpot. Let it cook for 6-8 hours on a high setting. The chicken should be tender. If you want it to be a little thicker add some flour. Right before you serve add the topping ingredients to each serving.
