  • 1 1/4 lb. ham, diced
  • 5 C. water
  • 4 ancho chiles, stems removed
  • 1 yellow onion, diced
  • 2 cloves garlic, mashed and minced
  • salt and pepper, to taste
  • 1/2 tsp oregano
  • 1/4 tsp cumin
  • 2 cans white hominy (totaling about 60 oz)
  • smoked paprika, for garnish
  • fresh cilantro, for garnish
