Crockpot Miso Soup
Serving Size / Yield
- 6 C. water
- 4 Tbs. white or yellow miso paste
- 12 oz. extra firm tofu, cubed
- 1 C. green onions, chopped
- 1 large carrot, diced
- 1 clove garlic, minced
- 2 C. sugar peas, sliced
Pour water into crockpot and whisk in the miso until completely dissolved.
Add tofu, garlic, and carrot and set the crockpot on low.
Cook for 6-8 hours, checking occasionally to ensure the soup doesn't boil.
Add green onion and cook on high for 20 minutes.
Stir in sugar peas just before serving the soup. Adding rice noodles is a great way to make this a heartier dish.
