  • 1 1/2 C. Baby Bella Mushrooms, sliced
  • 1 Medium Onion, chopped
  • 2 Garlic Cloves, minced
  • 2 lb. Boneless Skinless Chicken Breasts
  • 1 tsp. Sea Salt, divided
  • 1/2 tsp. Ground Black Pepper, divided
  • 1 6 oz. can Tomato Paste
  • 1 C. Chicken Broth
  • 2 Tbs. Cornstarch
  • 2 tsp. Granulated Sugar
  • 1 1/2 tsp. Dried Basil

In a large crockpot, combine the mushrooms, onion, and garlic. Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Arrange the chicken atop the vegetable mixture. In a medium bowl, stir together the tomato paste, chicken broth, cornstarch, sugar, basil, and remaining salt and pepper. Pour the tomato paste mixture over the chicken. Cover and cook on low for 4-6 hours, or until chicken is cooked through and tender.
