This slices very well for sandwiches the next day, so leftovers are never around for too long.

  • 2 lb. lean ground beef
  • 2 eggs
  • 2/3 C. Quaker oats
  • 1 pkg. dry onion soup mix
  • 1/2 C. catsup (or barbecue sauce)

Reserve 2 Tbs. catsup. Combine beef, eggs, oats, soup mix and remaining catsup. Shape into a round loaf for crockpot or oblong for oven. Put in crock pot, or bread pan. Top with remaining catsup. Cover and cook on low 8-10 hours, or 4-6 hours on high. If using oven cook for about 1 hour 15 minutes at 350 degrees. Cover with foil if browning too fast.

  • I use 2 eggs for every pound of ground beef and I prefer to use sauce and cheese instead of onion soup. Just too much salt and I love fresh diced onions myself......... but oh Quaker Oatmeal........ yummm, yummm, are concerned about Cholesterol, then use egg whites per pound or those egg beater type eggs. Also, if you want to save electricity, make your loaves into smaller ones and if you use the 2 eggs and refrigerate for an hour or so first, you can bake them on a sheet in a table top oven..... like my GE rotisserie that does everything and costs so much less.

  • I use 1/4 pack of soup mixture and I pour one can tomato soup and one can beef gravy(I like Boston Market brand)..Meatloaf is juicy with lots of delicious gravy..I cook on low heat in crock pot for 6- hrs..

  • Cooked in crockpot for 8 hours on low and it burned. I work graveyard shift so I was sleeping while it was cooking. I didn't have a chance to cover it with foil.

  • Very easy & tasted good. I will use a little less of the onion soup mix next time though, it was a little strong.
