This is such a great and easy way to make cake. While it may take a little longer in the crockpot version to cook, I definitely think that this method produces an incredibly moist cake. I won’t be cooking it any other way from now on.

  • 1 C Brown Sugar, packed
  • ¼ C Butter, melted
  • 1 20-oz can Pineapple Slices, drained and juice reserved
  • 10 Maraschino Cherries, drained
  • 1 box Yellow Cake Mix
  • Vegetable Oil and Eggs as called for on Cake Box

Begin this recipe for a super simple crockpot pineapple upside down cake by spraying the bottom and sides of your crockpot with cooking spray or oil. Next, mix together the sugar and melted butter in a small bowl. Once fully combined, pour evenly into the bottom of the crockpot and arrange the pineapple slices on top. Set one cherry in the center of each pineapple ring and even around the slices if you would like.

Add water to the reserved pineapple juice so that it yields one cup. Prepare the cake batter according to package directions, using the pineapple juice mixture in place of the water. Slowly pour the batter over the pineapple and cherries.

Cover and cook on high for two and a half to three hours or until cooked through.
