  • 1 boneless pork shoulder, cubed
  • 2 tsp. ground cumin
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 Tbsp. olive oil
  • 1 C. chicken broth
  • 1 can whole tomatillos, drained
  • 3 onions, chopped
  • 3 cloves garlic, minced
  • 2 cans chopped green chiles
  • 1 Tbsp. sugar
  • 4 Sliced radishes, halved

Season the pork with 1 teaspoon cumin, salt, and pepper. Heat oil in a skillet over medium high. Cook the pork about 6 minutes while stirring until the meat is browned. Place the pork in the crockpot and add broth to the skillet. Stir it and pour into the crockpot. Add the tomatillos, onions, garlic, green chiles, sugar, radishes, and the remaining cumin to the crockpot. Cover and cook on low for 7 hours. Serve with cilantro if desired.
