  • 1 lb. boneless chicken breasts
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 (10 oz.) cans cream of chicken soup
  • 1 C. milk
  • 2 cloves garlic, minced
  • 1 tsp. thyme
  • Salt and pepper to taste
  • 1 (16 oz.) bag frozen mixed vegetables, thawed
  • 1 (12 oz.) can biscuits, baked

Place chicken, onion, and celery at the bottom of your crockpot. In a large bowl, whisk together cream of chicken soup, milk, garlic, thyme, salt, and pepper. Pour into crockpot, cover, and cook on high for 4 hours. Use a fork to shred chicken and stir in mixed vegetables. Cook for an additional 30 minutes on high. Serve with biscuits.
