This potato and bacon frittata makes a wonderful addition to the easy crockpot recipes you know and love. Serve this frittata with some hot sauce and hot cakes on the side, and it'll be a winner!

  • 6 C. potatoes, parboiled (alternately you may use 6 C. hash browned potatoes and there is no need to parboil)
  • 8 large eggs, beaten
  • salt and pepper to taste
  • cayenne pepper, to taste (optional)
  • 8 slices bacon, crisped and chopped
