  • 3 1/2 C. all purpose flour
  • 1 pkg. dry active yeast
  • 1 1/4 C. warm water
  • 1/4 C. fresh chopped rosemary, divided
  • 3 T. extra virgin olive oil
  • 1 tsp. sugar
  • 1 tsp. sea salt, divided

In a large bowl, combine water, yeast, and sugar. Let sit for 10 minutes or until mixture begins to bubble. Stir in olive oil, flour, half of the salt, and half of the rosemary. Knead until everything is fully combined. Cover and let rise for one hour. Form dough into a ball and turn out onto a floured surface. Let stand, uncovered, for another 20 minutes. Set your crockpot to high and line it with two pieces of parchment paper, allowing about two inches to hang from each side. Place dough in parchment-lined crockpot and sprinkle with remaining salt and rosemary. Loosely drape layers of paper towel on top of the crockpot and cover with the lid. Cook for two hours. If you prefer a crunchier exterior, place bread on a parchment-lined baking sheet and broil for five minutes.
