  • 1 15.25 oz. box White Cake Mix
  • 1/3 C. Canola Oil
  • 3 Egg Whites
  • 1 6 oz. container Strawberry Yogurt
  • 1 C. Fat Free Half-and-Half, chilled
  • 3 Tbs. Granulated Sugar
  • 1/2 tsp. Pure Vanilla Extract

Line a large crockpot with parchment paper. In a large mixing bowl, use an electric mixer to beat together the cake mix, vegetable oil, egg whites, and yogurt with 3/4 cup of water until well-combined. Pour cake mix into crockpot. Cook on high for 3-4 hours or until a toothpick inserted in the center of the cake comes out clean. Meanwhile, in a medium bowl, mix together the fat free half-and-half, sugar, and vanilla until smooth and thickened. When cake has cooled, slice in half widthwise, creating two layers. Place one layer on a serving plate. Spread whipped cream around and atop the cake. Stack the second cake layer on top and coat with the remaining whipped cream.
