Not so heavy, but very filling and flavorful, this roast won't be around for long.

Brown your roast in a skillet and season with salt and pepper on each side. Turn off burner, and prepare vegetables. Peel and halve potatoes, peel and quarter carrots. Put a 1/2 C. water in bottom of the crock pot, add carrots and potatoes. Set roast on top, if it is too large you may cut it to fit. Drizzle about a Tbs. of the vinegar slowly over the roast, sprinkle a tsp. of fresh of dried thyme over the roast. Cook on high for about 6 hours. Serve with rolls or bread.

  • If you didn't make this recipe exactly then you can't comment on how good or bad it was. If you added anything else to this recipe than you made a different recipe, NOT this one. Find the one that used the ingredients that you actually used and comment on that one. AmandaV probably make this roast, so I'm listening to her critique as accurate.

  • I use beef broth instead of wine, baby carrots (you don't have to slice), a quartered onion, new potatoes (you don't have to peel,) and I don't brown the roast. I just put it all in the crock pot and add an undiluted can of cream of mushroom soup. Lots of cracked pepper and serve over rice. wala yummy

  • I have not tried this, but I think I would add a couple of small or one medium onion that's been roughly chopped along with some celery chunks

  • I bet one could use Pork instead, no problem, this does need a bit more seasoning, NOT SALT, the French Onion soup is good. I use a Sicillian herb seasoning that I purchased at (gofigure) - where I get my coffee! It's (the herbs) are GREEEAAAT!

  • I have been cooking my roast similar to this for years...everything but the wine ( I used 1 pack of Lipton Onion Soup mix w/ 1/2 - 1c water and let me tell you AWESOME! Pot Roast or Beef Stew. I have used a can of Campbell's Golden Mushroom Soup with out water is also good. Try it - I bet your family will be pleased. There are no restrictions as to seasonings in my kitchen; I use seasonings!

  • Blah blah blah. This had no flavor. We didn't even save the leftovers because we knew we wouldn't eat them. Maybe if you used beef stock instead of water this would be better?
