Vanilla cake cooked up in the crockpot with coffee liqueur is layered with sweet, cheesy cream in this parfait inspired by the Italian dessert. For an elegant finishing touch, we recommend dusting the top of each parfait with cocoa powder.

  • 1 15.25 oz. box Vanilla Cake Mix
  • 1/2 C. Vegetable Oil
  • 3 Eggs
  • 1/4 C. Coffee Liqueur
  • 8 oz. Cream Cheese
  • 2 Tbs. Powdered Sugar
  • 1 tsp. Pure Vanilla Extract
  • 1 1/3 C. Whipped Cream

Line a large crockpot with parchment paper. In a large mixing bowl, use an electric mixer to beat together the cake mix, vegetable oil, eggs, and coffee liqueur until fully combined. Pour the batter into the crockpot. Cook on high for 3-4 hours or until a toothpick inserted in the center of the cake comes out clean. Meanwhile, in a medium mixing bowl, beat together the cream cheese, powdered sugar, and vanilla. Fold in the whipped cream. When cake is cool enough to handle, crumble into bite-sized pieces. Divide half of the crumbled cake up evenly between dessert glasses, then spoon event amounts of half of the cream cheese mixture over each cake layer. Repeat layering process with the remaining cake and cream cheese mixture, and serve.
