Ingredients

  • 2 cans diced tomatoes
  • 3 cloves garlic
  • 2 tsp basil
  • 1 C. vegetable broth
  • 1 tsp sugar
  • ½ tsp red pepper flakes
  • ½ C. low-fat cream cheese
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp melted butter

Directions

Pour the tomatoes, onion, butter, pepper flakes and basil into a medium-sized crockpot. Cook mixture for 5 ½ hours on low heat, or until the tomatoes are soft. Blend the mixture in a food processor with the cream cheese until smooth. Season with salt and pepper.
