A great meal for the day after Thanksgiving!

  • 2 C. shiitake mushrooms, sliced
  • 2 ribs celery, sliced
  • 1 sm. onion, chopped
  • 2 Tbs. butter
  • one 15-oz. can carrots, sliced
  • two 14-oz. cans chicken broth
  • 1/2 C. orzo pasta
  • 2 C. cooked, chopped turkey

In a skillet, saute mushrooms, celery, and onion in butter.  Transfer vegetables to slow cooker and add carrots, broth, orzo, and turkey.  Cover and cook on low for 2-3 hours or on high for 1-2 hours.
