  • 2 tomatoes, diced
  • 1 zucchini, diced
  • 2 carrots, diced
  • 1 lb. chicken, boneless, skinless, chopped
  • 2 tbsp. bay leaves
  • 1 cup low-sodium beef broth
  • French bread
  • 4 tbsp. margarine, melted

Drop tomatoes, zucchini, carrots, chicken, and bay leaves in the crockpot. Cover and cook for about 3 hours. While chicken is cooking, preheat oven to 350 degrees. Slice bread and spread margarine on one side of each slice. Place in oven for about 10 minutes or until tops of slices are golden brown. When chicken is done, serve over bread.
