This hearty winter soup makes a great first course or an entire meal. It'll warm you up from the inside out, but you won't have to slave over the stove all day to do it.

  • 1 1/2 lb. beef stew meat
  • 1 small bell pepper, chopped (1/2 C.)
  • 3/4 C. 1-inch pieces green beans
  • 3/4 C. chopped onion
  • 2/3 C. uncooked barley
  • 2/3 C. fresh whole kernel corn
  • 1 1/2 C. water
  • 1 tsp. salt
  • 1 tsp. chopped fresh thyme leaves or 1/2 tsp dried thyme leaves
  • 1/4 tsp. pepper
  • 2 14 oz. cans beef broth
  • 2 14 oz. cans diced tomatoes with garlic, undrained
  • 1 8 oz. can tomato sauce

Mix all ingredients in a 3 1/2 to 6-quart crockpot. Cover and cook on low heat setting for 8-9 hours (or high heat setting for 4-5 hours) or until vegetables and barley are tender.

  • One large potato, diced, should be enough. Yes, use your your imagination. Any vegatable could be added. Empty your refridgerator of leftovers. My family insist on noodles, also. Use beef bullion if you have no beef broth.

  • Can't have vegetable soup without some chopped carrots & potatoes! Carrots add a subtle sweet touch...really is delicious! I've never used barley or green pepper, or thyme. May try it on a small batch first. Veg. soup without the beef is too bland. Beef gives it the full flavor!

  • I to was wondering about the carrots and potatos, however the barley would take care of that some what. As my dear finicky daughter only likes raw carrots I was glad not to see them in the ingredients list and at first look thought maybe the orangish items maybe were tomatos, However they can be left out as someone else stated.

  • Some have stated that they do not see carrots and potatoes in the recipe. The good thing about vegetable soup is you can add any vegetable. It's a good way to get rid of any leftovers too! Be creative and enjoy!

  • Sounds good, but technically should not be called vegetable soup since it contains beef. Ditto for the other "vegetable" soup recipe. Could be called vegetable beef soup.

  • The picture for recipe caught my eye so I am going to make it. It looks like there are potatoes in the picture but not in the recipe. Vegetable soup should have potatoes. Can someone tell me how many please?
